High-fat foods can have a place in low-fat cooking -- if you know how to
pick your spots.
For a true cheese flavor in gratins and pasta dishes, use
small amounts of aged cheese, such as extra-sharp cheddar or Reggiano Parmesan. 2 tablespoons of grated Parmesan cheese has only 44 calories and 3.0 grams of
fat. The result is far more satisfying than using a larger amount of a bland,
low-fat cheeses without the excess processing. I don't so much eat pasta or gratins but I usually sprinkle a couple of tbs in my veggies or tuna to add a little taste and extra protein.

- Pick a time in your life when you achieved something you never thought possible or that you’d never been able to accomplish in the past (oh, c’mon, think. In all the years you’ve been on this earth, there has to be something ) What did you say to yourself to continue to act until you achieved said “something” ?
