What's Cookin Wednesday? Turkey & Sweet Potato Lettuce Cups

Turkey & Sweet Potato Lettuce Cups

TIME: 20 minutes
SERVINGS: 2

Ingredients: 


  • 8 ounces whole, pre cooked  turkey breast, sliced 
  • 4 tsp oil
  • 1 sweet potato, peeled and diced 
  • 1 tomato
  • 1 chopped onion
  • 1 garlic clove, minced 
  • 1/4 tsp red pepper flakes 
  • 3 tbs soy sauce 
  • lettuce bibs 
Preparation: 
  • Heat 4 tbs oil in skillit over medium heat
  • Add Potato, onion and garlic
  • Cook 10-12 minutes
  • Add turkey breast, soy sauce and red pepper 
  • Cook until turkey is heated through 
  • Divide among lettuce bibs
