Whats Cookin Wednesday ? Crunchy Almond Crusted Chicken & A Little Perspective

Almond Crusted Chicken 

TIME: 15 minutes

SERVINGS: 2

Ingredients: 


8 oz boneless, skinless chicken breast
2 Tbsp cornstarch
2 eggs w
16  finely chopped almonds

Preparation: 



  1. Wisk eggs into a bowl 
  2. Sprinkle  each side of the chicken breasts with cornstarch. Dip it into the egg 
  3. Sprinkle with almonds 
  4. Coat  a small, nonstick skillet with a spritz of olive oil  and heat over medium heat 
  5. Cook the chicken 5 minutes on each side or until a thermometer inserted in the thickest part registers 165 degrees F

Think eating healthy is "too expensive" ? A Study from the Harvard School of Public Health shows that the difference between healthy and unhealthy eating is just $1.50 a day. The researchers evaluated the cost of food by types of eating pattern.

For example, a diet heavy on vegetables, nuts and fruits, like the Mediterranean diet, versus one rich in processed foods and meat. They also looked at price differences within specific food categories, such as grains, proteins, fats and dairy. The biggest price differences arose when it came to proteins/meats: Healthier, leaner cuts, they found, were on average about 29 cents more per serving. MORE
