What's Cooking Wednesday? chicken Fajitas and a little Research

You all have heard this come out of my mouth thousands of times but, here ya go... a study to prove it

A study, published in The Journal of Physiology, shows that short bursts of very intense exercise — equivalent to only a few minutes per day — can produce the same results as traditional endurance training."The most striking finding from our study was the remarkably similar improvements in muscle health and performance induced by two such diverse training strategies," says Martin Gibala, an associate professor of kinesiology at McMaster University   . Chicken Fajitas

Number of Servings 2
Total Preparation Time  45 minutes 
Actual Cooking Time 15-30 minutes 


Ingredients


  • juice of 1 or 2 limes
  • 2 tsp oil oil
  • 1 tsp ground pepper or chili powder
  •  8 oz boneless, skinless chicken breasts
  • 1 med red onion, sliced
  • 1red or green bell pepper
  • garlic clove, minced

Preparation

1. In a shallow dish, combine lime juice, 1 tsp oil, and red pepper or chili powder. 
2. Add chicken breast strips and toss to coat.
3. Set aside for 10 minutes to marinate.
4. Heat remaining 1 tsp oil in a heavy skillet over medium-high heat. 
5. Add onions and peppers and saute for about 8 minutes, until they soften.
6. Add garlic and cook 1 minute.
7. Increase the heat to high. 
8. Add chicken strips and saute umtil the chicken is cooked     through, (about 4 minutes).
9. Top with guacamole and  salsa
