What's Cooking Wednesday? Tuna Guac Tacos

Tuna Guacamole Tacos      serves 2


Ingredients:

·         2  6 oz Tuna Steaks
·         ½ C Red Onion, thinly sliced
·         1 tbs lemon juice
·         1 avocado, mashed
·         1 tbs olive oil
·         4  small corn tortillas

Directions:

1.    Combine lemon juice and avocado
2.    Add 1 tbs oil to grill pan and heat
3.    Add tuna to pan and cook 4 minutes per side or to desired degree of done ness
4.    Cut tuna into ¼ inch slices
5.    Warm tortillas
6.    Spread avocado mixture evenly among 4 tortillas
7.    Top with Tuna

Exchanges per serving:   42g Pro, 1.5 Br, 3 Fa

I love this recipe with a good lean steak substituted for the Tuna. Just be sure to add 2 fats to your exchanges
